Makes 10-12 servings
Filled with fiber, protein, and healthy fats, these homemade granola bars whip up quicky and will help nourish you for whatever your day might bring.
1- 1/2 cups old-fashioned oats
1- 1/4 cup whole wheat flour
1- 1/4 cup light brown sugar
1/8 teaspoon cinnamon
1/2 teaspoon salt
3 eggs
1/2 cup canola oil
1/2 tablespoon vanilla extract
8 ounces blueberries
1/4 cup pepita seeds
Preheat oven to 350°F.
Combine oats, flour, brown sugar, cinnamon, and salt. In a separate bowl, whisk eggs, oil, and vanilla. Combine the wet and dry ingredients in mix until well blended. Fold in blueberries and pepita seeds. Spread into greased 9”x13” pan, press slightly, and bake 25 minutes. Cool, cut into bars, and hold up to seven days.
